Grilled Chicken with Lime Leaves

  • Yield 6 servings
  • 700 grams boneless Chicken thigh/breast, cubed
  • 2 teaspoons minced Garlic
  • 1 tablespoon minced Lemongrass
  • 1 tablespoon Honey
  • 2 tablespoons Annatto/ Chilli oil
  • 2 tablespoons Fish sauce
  • Salt and pepper
  • 1 teaspoon Sesame oil
  • A handful of Lime leaves
  • Bamboo skewers
  1. Combine the chicken cubes with the rest of ingredients (except lime leaves) and mix well Leave to marinate for 1 hour
  2. Soak the skewers in boiling water for 5 minutes to sterilize and soften
  3. Skew the first cube of chicken on the skewer. Wrap the second cube in lime leaves and add on. Repeat until finish
  4. Grill over char coal or in a grilling pan until golden and cooked through
  5. Serve hot with a lime wedge or muoi tieu chanh (salt pepper lime sauce)
